Zea mays

 

This spectacular flour corn was bred and stewarded by the Navajo tribe, in the area now commonly referred to as the four-corners region of the southwestern United States. We first trialed this variety in 2018, and found that it grew surprisingly well in the Pacific Northwest, despite significant climate differences.

 

Beyond flexibility, this corn has always shown itself to be one of the most beautiful food-plants that we have grown. Once ground into flour, the cornmeal is surprisingly blue. We love to showcase this variety in beautiful and flavorful cornbreads.
