While many beans traveled from their centers of domestication in Mesoamerica and the Andes to Europe,  another group of beans traveled further west to China, where they became popular as both dry beans and snap beans. After 400 years of breeding, Chinese common beans have developed their own distinct characteristics, and Imperial Blush is one of our favorite varieties from that side of the world.

 

Growing in flat pods, on pole-type plants, the large, peach-colored beans are striped and speckled with deep magenta. We love these as a stand-in for cranberry beans in stews and baked beans!
